As Thanksgiving approaches, it’s the perfect time to reflect on the things we’re grateful for. At Custodio & Dubey, we’re thankful for our incredible team, our amazing clients, and the work we do every day to make a difference where we can.
While we enjoy this season of gratitude, we also want to ensure Thanksgiving is a safe and happy holiday for everyone! With Thanksgiving feasts coming up, it’s important to keep food preparation safe and stress-free. That’s why we’re sharing some essential tips on Thanksgiving food prep and safety so you and your family can have a healthy, happy holiday!
Before Cooking
Wash Your Hands and Clean Your Surfaces!
- Wash hands with soap and water for at least 20 seconds before handling food.
- Clean countertops, cutting boards, knives, and utensils with soap and hot water before and after preparing raw meat.
Separate Raw Foods
- Keep raw turkey and other meats separate from ready-to-eat foods to avoid cross-contamination.
- Use separate cutting boards for raw meats and vegetables.
Thaw Safely
- The U.S. The Department of Agriculture (USDA)recommends thawing your turkey in the refrigerator, as it’s the safest method. This may take a few days so plan accordingly! And beware of cross contamination – clear off the shelf where you are thawing your turkey and keep it covered with plastic wrap.
During Cooking
Cook Thoroughly
- One of the most important safety measures is making sure your turkey is cooked thoroughly. Use a food thermometer to ensure the turkey reaches an internal temperature of 165°F (74°C) in the thickest part of the breast and innermost part of the thigh.
- Stuffing cooked inside the turkey must also reach 165°F. It’s always safest to cook stuffing separately; and your turkey will cook faster, too.
Don’t Reuse Plates or Utensils
- Use fresh serving utensils and clean plates for cooked food to avoid cross-contamination from raw meat juices.
After the Meal
Handle Leftovers Promptly
- Refrigerate cooked dishes within two hours to prevent bacterial growth.
- Divide large quantities into smaller portions and store in airtight containers.
- Always label leftovers with the date they were stored.
Reheat Leftovers Safely
- Reheat turkey, stuffing, and other leftovers to 165°F (74°C) before serving. Stir soups and casseroles to heat evenly.
Discard After 3-4 Days
- Most leftovers should be consumed or frozen within 3-4 days to avoid spoiling. Don’t let your Thanksgiving turkey see Christmas!
Additional Tips
Use Your Thermometer Wisely
- Always clean your food thermometer between uses to avoid transferring bacteria.
Consider Allergies and Diets
- Be mindful of your loved ones’ allergies! Common allergens include nuts, dairy, and gluten.
